Braised Pork Belly with SteamFresh vegetables

We think slow cooked pork belly is the easiest way to cook it, using aromatics to create the most flavourful and meltingly tender meat. The dish is fragrant from spices, ginger and garlic, with a bold vinegar zing adding depth to the sticky sauce.

Meat
1 - 1.5kg free range pork belly, boneless, skin on, cubed 5 - 8cm pieces
3 tbsp rice bran or olive oil
5 big slices of ginger
3 cloves garlic, crushed
2 shallots, sliced
1 teaspoon black peppercorns
4 star anise
8 cloves
1 bay leaf
1 leek, white stalk section - washed and cut into thick rings. Green stalk section - chop into half (or 3 spring onions, quartered)
¼ cup Chinese shaoxing wine (or sherry)
¼ cup light soy sauce
2 tbsp dark soy sauce
¼ cup chinese black vinegar
½ cup Chinese rock sugar (or white sugar)
2 cups stock (chicken or pork)

Method
Step 1
Heat oil in a heavy based casserole pan over medium to high heat. Add ginger and garlic and fry for a minute.
Step 2
Add pork pieces and pan fry each side till golden and caramelized. Do in batches to avoid over crowding the pan. Add peppercorns, star anise, cloves, bay leaf and leeks.
Step 3
Pour in wine, soy sauces, black vinegar, sugar and stock; bring to the boil.
Step 4
Turn the heat to low, cover and simmer for 1.5 hours, checking every now and then to make sure nothing's sticking to the pan and that meat is covered with cooking liquid. Add a little more stock or water if liquid is reducing too quickly.
Step 5
Check pork is soft and tender by gently pulling a piece apart. Remove cover and turn up the heat to medium, and reduce the sauce until syrupy (about 10 mins).
Step 6
Season to taste by adding extra vinegar, sugar, salt or water.
Tips
Serve with hot jasmine rice and Wattie's SteamFresh vegetables.
