100g walnuts
2 unpeeled garlic cloves
500g dried spaghetti
350g pack Wattie's® Free Flow Spinach
Juice of ½ lemon
Salt and pepper, to taste
Parmesan cheese, to serve

Step 1
Preheat a moderate oven and place a large pot of water on to boil.
Step 2
Spread the walnuts over a baking tray. Add the unpeeled garlic cloves and roast for 10-15 minutes, until the walnuts are golden and garlic cloves have softened slightly.
Step 3
Once the water boils, add the pasta and cook to al dente. Meanwhile, cook the Wattie's Free Flow Spinach in pan for 3-5 minutes and then place into a food processor with the toasted walnuts, peeled garlic cloves and lemon juice. Blend to a smooth puree and season with salt and pepper to taste.
Step 4
Drain the cooked pasta, reserving half a cup of cooking water. Return the drained pasta to the pan and pour over the spinach pasta sauce. Toss to combine, adding a little pasta water to loosen the sauce. Serve with grated parmesan if desired.


For added flavour, blend the pasta sauce with a good handful of fresh basil or mint leaves.
