Step 1
Heat the oven to 180c fan forced. Wash the kumara and dice into 1cm chunks, into a baking dish. Drizzle with oil, add salt, pepper and ½ tbsp of curry powder. Toss to coat and bake until the kumara is soft.
Step 2
Put the rice on to cook. In a hot fry pan, cook the onion and garlic until soft and fragrant. Mix through the remaining curry powder. Add the coconut milk and a tin of Wattie's Crushed and Sieved Tomatoes and cook until thoroughly warmed through.
Step 3
Add Wattie's Baby Peas & Supersweet Corn, cooked kumara, spinach, salt and pepper. Stir until well combined. Pop a lid on and simmer for a further 10 minutes.
Step 4
Plate up the rice, veggie-packed curry, and naan bread, and enjoy.
