Kids find this pud magical – pour boiling water and jam over the batter and it magically turns into a lovely gooey sauce under the pudding!

2 cups self-raising flour
¼ cup sugar
100 g butter
1 egg
1 cup milk
1 tsp vanilla essence
Sauce:
375 g jar Craig's Black Doris Plum Jam
1 cup boiling water

How do I make it ?

Step 1
1. Preheat oven to 180°C.
Step 2
2. Sift the flour and sugar into a bowl.
Step 3
3. Rub in the butter until the mixture forms coarse crumbs.
Step 4
4. Blend the egg, milk and vanilla essence together and pour into the dry ingredients. Mix together gently.
Step 5
5. Spread the batter over the base of a well greased 2 litre capacity pie dish.
Step 6
6. Mix the Craig's Black Doris Plum Jam with the hot water and pour carefully over the top of the batter.
Step 7
7. Bake for 35-45 minutes until the pudding is golden and well risen.
Step 8
Stand 5 minutes before serving, as the sauce is very hot.
Step 9
Dust with icing sugar.
Step 10
Serve hot with yoghurt, whipped cream or ice cream.
