• 500g lean beef mince
  • ¼ cup freshly chopped parsley
  • ½ cup grated carrot
  • ½ cup uncooked long grain rice
  • 1 onion, chopped
  • 2 sticks celery, chopped
  • 525g jar HEINZ [SERIOUSLY] GOOD™ Tomato & Basil pasta sauce
  • ½ cup water
  • 1 bay leaf (optional)
  1. In a bowl mix together beef mince, parsley, grated carrot and long grain rice. Season with salt and pepper. Roll mixture into 16 even sized balls.
  2. Heat a dash of oil in a lidded frying pan. Add onion and celery and cook until softened. Stir in Wattie’s Tomato Paste. Pour over HEINZ [SERIOUSLY] GOOD™ Tomato & Basil Pasta Sauce and water. Stir while bringing sauce to the boil. Reduce heat and add meatballs and bay leaf. Cover. Simmer for 30-35 minutes, turning meatballs halfway during cooking, until meatballs are cooked. Serve with your favourite green vegetables.

A bit different to our usual weeknight meals but everyone enjoyed it. Like that there is hidden vegetables in the meatball, next time will add shredded zucchini or cabbage as well. We enjoyed it with garlic bread to scoop up the extra gravy.

Tasty sauce and easy dish to make however I thought the meat tasted boiled still. I like browned meatballs. Harder to do this with the rice added pre-cooking. If you moit the rice and bake the matballs in the oven first and then add that tasty sauce mmm.
Serve with rice instead.

Nice but a little dry. I think due to the rice absorbing a lot of the natural juice from the mince as it cooks. I will try this again but maybe with partly cooked rice or something. such a good, budget friendly meal though!

If the sauce is reducing a little too much, try adding an extra 1/4-1/2 cup water while the sauce is simmering to keep the meatballs saucy.
