Step 1
To make the Veggie Bean Chilli, heat oil in a large deep fry-pan with a fitted lid to a medium-low heat.
Step 2
Saute onions for five minutes until soft
Step 3
Drain beans into a sieve and rinse well until the water runs clear. Add tomatoes, beans, frozen vegetables, spices and water to the fry-pan. Mix well, bring to a boil then reduce to a simmer.
Step 4
Simmer for 45 minutes or until thick.
Step 5
Serve the bean chilli with corn chips and a garnish of coriander.
