Step 1
Preheat the oven to 190°C fan bake. Line a large baking tray with baking paper.
Step 2
Cut the kumara in half horizontally and score the flesh. Place cut side down on a baking tray. Drizzle with oil and season with salt and pepper. Place in the oven to bake for 20-25 minutes or until tender.
Step 3
Meanwhile, heat a dash of oil in a medium frying pan and cook the garlic until fragrant. Add the corn and black beans and cook until golden and heated through. Stir through the paprika and cumin and cook for a further minute. Keep warm.
Step 4
Use a fork to fluff the flesh of the kumara. Top with the grilled corn and beans, cheese, sour cream, red onion and coriander.
