Easy Spinach & Cottage Cheese Lasagna

This spinach and cottage cheese lasagna is an affordable, vegetarian friendly recipe for less than $20.

6 Lasagna sheets
350g Wattie's Free Flow Frozen Spinach
1 Tbsp olive oil
1 Medium onion, finely diced
1 Garlic Clove, crushed
1 tsp mixed herbs
1⁄2 tsp salt
300g Cottage cheese
500ml Milk
50g Butter
50g Flour
1⁄2 tsp Salt
Freshly ground black pepper
1 Cup grated cheese

Step 1
Place the Wattie's frozen spinach in a bowl, cover and microwave for 3 minutes.
Step 2
Heat oil in a pan, and fry off the onion. Add the garlic, mixed herbs and spinach. Use a spatula to mix everything together, and break apart the spinach. Cook for a few minutes, then set aside to cool.
Step 3
While the spinach cools, make the white sauce. Melt butter in a saucepan, then sift in the flour (this helps reduce lumps). Whisk the flour and butter together over medium heat, and cook this paste for 2 minutes. Gradually pour in the milk, whisking well between each addition. Cook for a further 2 to 5 minutes, until the sauce thickens. Season with salt and pepper.
Step 4
Stir the cottage cheese into the cooled spinach mixture, and season.
Step 5
Time to assemble the lasagne - ladle some white sauce into the bottom of a baking dish (I used a 24cm square one). Place a layer of lasagne sheets on top, then spoon over the spinach mixture, another layer of white sauce, and a sprinkle of cheese. Repeat until you run out of spinach, and finish with white sauce and cheese. Crack over some black pepper.
Step 6
Cover with tinfoil, and bake at 160C fan/180C conventional for 15 minutes. Remove the tinfoil, and cook for a further 15 minutes. Grill for 5 minutes at the end.
Step 7
Leave to sit for 10 to 15 minutes before slicing and serving.
