Crispy Eggplant & Vegetable Stir-fry

Looking for a quick and easy weeknight meal? This recipe uses Wattie's Wok Creations Chinese Style Vegetables & Chinese BBQ Stir-Fry Sauce paired with crispy eggplant for a flavourful dinner that's on the table in 20 minutes

1 eggplant
2 Tbsp cornflour
Vegetable oil for shallow frying
2 cloves garlic, crushed
1 tsp minced ginger
½ red chilli, finely diced
400g bag Wattie's Frozen Wok Creations Chinese Style Stir-Fry Vegetables
125g pouch Wattie's Wok Creations Chinese BBQ Stir-Fry Sauce
Toasted sesame seeds and extra sliced red chilli to garnish

Step 1
Trim the eggplant, cut in half, then slice each half into 1cm wedges. Place on a tray and toss through the cornflour to coat. Add enough oil into a wok or frying pan to a depth of 2cm. Heat until a piece of bread sizzles (180 °C). Shallow fry the eggplant in batches for approx. 3 minutes until golden and crispy. Place on a tray lined with paper towels. Set aside and keep warm.
Step 2
Pour out excess oil from pan, to leave 1 tablespoon in the pan and reduce heat to medium. Add garlic, ginger and chilli and stir fry until fragrant. Increase the heat and add Wattie's Wok Creations Chinese Style Stir-Fry Vegetables . Continue to stir fry over high heat for 3 minutes. Pour over Wattie's Wok Creations Chinese BBQ Stir-Fry Sauce and toss through vegetables. Continue stir frying for a further 2 minutes, until vegetables are hot. Toss through crispy eggplant just before serving.
Step 3
Garnish with toasted sesame seeds and sliced red chilli. Serve with rice.
