- 400g pkt cooked frozen prawn cutlets, thawed, tails removed
- 1 avocado, peeled and diced
- 250ml bottle Eta Thousand Island Dressing
- salad leaves
- Paprika for garnish
- Lemon wedges
- Put the prawns and avocado into a bowl. Carefully mix through about 1/3 cup Eta Thousand Island Dressing.
- Make a bed of salad leaves on a serving platter. Pile the prawns and avocado onto the leaves. Sprinkle a little paprika to garnish before serving. Serve with a lemon wedge on the side.
