Barbecue Sticky Glazed Ribs
These yummy Sticky Glazed Ribs make all other finger food pale in comparison. A hearty meal that combines the unique flavour of 100% New Zealand Pork with sweet ‘n sour seasonings such as peaches, ginger, chilli, mint and lime juice, it’s truly unbeatable. Dig in and don’t mind fingers!
Ingredients
- 1.5-1.8kg 100% New Zealand Pork Spare Ribs
- 410g can Oak Peach Slices in syrup, drained
- 3 Tbsp HP Sauce
- 1 Tbsp minced ginger
- 1/2 cup water

Spicy Peach Salsa - 1/2 red onion, peeled and finely chopped
- 1 tsp minced red chilli
- 1 Tbsp freshly chopped mint
- 3 Tbsp HP Sauce
- 1 Tbsp lemon or lime juice
Method
1. Cut 100% New Zealand Pork spare ribs into 2-3 rib pieces, set aside.
2. Combine Oak Peaches slices in syrup, HP Sauce , ginger and water in a food processor or blender, process until smooth.
3. Pour the peach marinade into a large saucepan with the ribs. Cover and bring to the boil, reduce heat and simmer gently for 30-35 minutes, stirring occasionally. Remove the ribs from the saucepan and set aside. Simmer the marinade until reduced and thickened.
4. Barbecue cooked ribs, over a medium heat for 10-15 minutes brushing with reduced peach marinade until sticky and golden. Serve with barbecue vegetables and Spicy Peach Salsa.
Spicy Peach Salsa
Roughly chop drained Oak Peach Slices , combine with red onion, chilli, mint, HP Sauce and lemon or lime juice, mix well.
