Sausage and Bean Soup

Looking for a new way to use up staple ingredients? Try this easy, tomato-based sausage and bean soup using Wattie's® Chopped Tomatoes in Purée.

Ingredients

4 Italian sausages
2 tsp extra virgin olive oil
1 brown onion, chopped
2 carrots, chopped
1 large capsicum, deseeded & chopped
2 garlic cloves, crushed
1 Tbsp chopped rosemary
1 red chilli, deseeded & chopped (optional)
1 L chicken stock
2 x 400g cans Wattie's® Chopped Tomatoes in Purée
420g can white beans, drained & rinsed
100g spinach or silverbeet leaves, chopped
Salt and freshly ground black pepper, to taste
Grated parmesan, to serve

Step 1
Remove the casings from the sausages and roughly chop. Heat the oil in a large pan over medium heat. Add the sausage and cook until well browned. Transfer to a small bowl, and set aside.
Step 2
Add the onion, carrot and capsicum to the pan. Cook 6-8 minutes, until the vegetables are softened and lightly golden. Add the garlic, rosemary and chilli if using, cooking for a further 1-2 minutes, or until fragrant.
Step 3
Add the stock and Wattie's® Chopped Tomatoes in Purée to the pan. Bring to the boil, then reduce the heat and simmer 10 minutes. Add the white beans and chopped greens, cooking for a further 5 minutes. Remove from the heat and season to taste. Serve with parmesan, if desired.
