Chocolate Hot Cross Bun Cupcakes
Delightful chocolate mayonnaise hot cross bun cupcakes are an ideal treat for celebrating Easter!

¼ cup Coca
1 cup Hot Water
1 Tbsp Vanilla extract
2 cups plain flour
2 tsp Baking soda
1 cup Caster sugar
¾ cup Heinz Seriously Good Original Mayonnaise
Chocolate Buttercream: 150g Butter, softened
2 cups Icing sugar
2 Tbsp Cocoa powder
White Chocolate Cross: 50g White chocolate, melted

Step 1
Preheat the oven to 180°C bake. Line a 12- hole cupcake tin with cupcake cases. Step 2
In a medium bowl, mix the cocoa, hot water and vanilla extract. Set aside to cool. Step 3
Sift flour, baking soda and sugar in a large bowl and make a well in the centre. Step 4
Add the Heinz Seriously Good Original mayonnaise into the cocoa mixture, mix until well combined, then add into the flour mixture. Step 5
Spoon the mixture evenly among the cupcake cases. Bake for 15-20 minutes or until a skewer inserted into the centre comes out clean. Transfer to a cooling rack to cool completely. Step 6
Beat the butter until creamy. Add icing sugar and cocoa and beat until smooth. Step 7
Pipe or spread the buttercream over each cupcake. Step 8
Transfer the white chocolate into a piping bag and pipe a cross over each cupcake. Tips
Switch It Up
To make these cupcakes suitable for any occasion, leave out the white chocolate crosses.
