1 small red onion, finely diced
1 Tbsp chopped parsley or basil
25 g feta, crumbled

Dressing
2 Tbsp olive oil
1 Tbsp balsamic vinegar
1 Tbsp chopped sundried tomatoes

Step 3
3. Add red onion, chopped parsley or basil and feta. Toss through dressing. Serve with the cooked chicken.

4. To make the dressing whisk together olive oil, balsamic vinegar and sundried tomatoes.
