Ingredients

  • 135 g tub Mediterranean Basil Pesto Chunky Dip
  • 350 g dried spaghetti or penne

Method

1. Cook pasta in a large quantity of boiling, lightly salted water following the packet instructions. Drain.

2. While hot stir through the Mediterranean Basil Pesto Chunky Dip to coat the pasta well. Serve immediately.

This is a quick and simple side dish and can easily be turned into a meal by adding shredded chicken and some veggies fresh or frozen. Splurge and add mozzarella or parmesan cheese with a quick sizzle under the grill for an extra texture and taste.

The flavors in the Mediterranean dip were delicious, with Parmesan and cashew notes that really blended well. However, overall the dish was a bit on the bland side and needed something else - ham, cooked roast chicken or smoked chicken , chorizo, asparagus, broccoli and cauliflower, etc. Presentation was also a bit bland and would benefit from the addition of some of the above to add a bit of color. Also possibly a bit of fresh chopped basil on top. However as a meal base it is excellent and I will make it again and add other ingredients. A handy recipe for busy nights and good for using up leftovers (chicken etc). Very pleased I tried it.

I tried the basil pesto with spagetti pasta for a lunch dish which was cooked the night before. It was delicious and the flavours had permeated into the pasta. So I tried it with the penne and it was just as tasty. Will try it another night with the kids.Great stuff!!

OMG - This could not be easier!!! Not only that, it tastes amazing!! - I added as a side thought sliced tomatoes/freshly torn mozzarella/basil leaves drizzled with olive oil. Also zucchini sliced and grilled on a hot plate - Yum!

Easy to make..lovely and chunky and the taste of the Basil Pesto blended thru easily . The Cashews n Parmesan was not strong but very tasty and definitely chunky..so easy to be tempted to eat a spoonful after 1-2!! Wld definitely make this dish again. Great for unexpected visitors. Tku for the opportunity to try and defi itely on the menu again
