Ingredients

  • 500 g lean beef mince
  • 1 small onion, very finely chopped
  • 1 cup fresh breadcrumbs
  • ½ cup grated Parmesan cheese (optional)
  • 1 handful freshly chopped parsley
  • 1 egg, beaten
  • 2 cups (300g) diced vegetables (carrots, celery, pumpkin)
  • 525 g jar HEINZ [SERIOUSLY] GOOD™ Tomato & Sweet Basil Pasta Sauce
  • ½ cup water

Method

1. Mix together beef mince, onion, breadcrumbs, Parmesan cheese, parsley and beaten egg. Roll mixture to make 20 meatballs. Refrigerate for 10 minutes.

2. Heat a dash of oil in a deep lidded frying pan. Brown the meatballs over a high heat. This may be best done in 2 batches.

3. Reduce the heat. Return the meatballs to the pan. Add diced vegetables. Pour over HEINZ [SERIOUSLY] GOOD™ Tomato & Sweet Basil Pasta Sauce and water. Bring sauce to the boil.

4. Reduce heat. Cover and simmer for 30-35 minutes until meat is cooked and vegetables are tender.

5. Serve over spaghetti or your favourite pasta. Garnish with shaved Parmesan and parsley or basil leaves if wished.

Tips

  • Add the water into your empty jar of pasta sauce and shake well to ensure you get all the delicious sauce out of the jar before adding to the pan.
  • Allow 75g of uncooked spaghetti per person.
  • Cooked meatballs and sauce can be frozen. Spoon into airtight containers and freeze until required.
  • Substitute HEINZ [SERIOUSLY] GOOD™ Tomato & Sweet Basil Pasta Sauce with any of your favourite HEINZ [SERIOUSLY] GOOD™ pasta sauces.
  • 2 slices of toast bread will make 1 cup of breadcrumbs.

this was very yummy what I did though was cut up the carrots & celery (no pumpkin) into small pieces and added to the meatball mixture. this gave a nice crunch and flavour too the meatballs - my wife loved it.
