Fish is the only dish I can eat with vegetables, especially if there is a crunch to it - so this recipe is great to have for my evening meal.
Crunchy Fish Fillets
Nervous about cooking fish? Don’t be. This crunchy fish is seriously good and super easy to prepare.

Ingredients
- 1/2 cup panko crumbs (or breadcrumbs)
- 2 Tbsp chopped parsley
- grated zest 1/2 lemon
- 4 x 125g white fish fillets (Tarakihi or Snapper are good)
- 1/2 cup Heinz Seriously Good Original Mayonnaise
Tips
Fish fillets can be replaced with boneless, skinless chicken breasts if preferred. Bake at 190°C for 25-30 minutes, until chicken is tender and crumbs golden.
Method
1. Preheat oven grill or turn oven to 190°C fan grill setting.
2. Mix panko crumbs, chopped parsley and grated lemon zest together.
3. Place the fish on an oven tray lined with baking paper. Spread each fillet with Heinz Seriously Good Original Mayonnaise and sprinkle over crumb mixture.
4. Grill or fan grill the fish with shelf towards the top of the oven for 8-10 minutes or until the fish is just cooked through and the coating crisp and golden. Serve with a salad or seasonal vegetables.
