Easy Chicken Chow Mein

This chicken chow mein is a quick and easy meal to whip up on a weeknight, and is soon to be your new family favourite. Change it up with peas and edamame beans and top with spring onions, sesame seeds and cashew nuts to bring the taste to life.

Ingredients

400 g boneless chicken thighs, cut into thin strips
2 tsp sesame oil
2 cloves garlic, crushed
½ tsp Chinese 5 Spice powder
250 g dried fine egg noodles
1 tbsp vegetable oil
250 g (2 cups) Wattie's Frozen Peas or Edamame Beans
210 g pouch Wattie's Wok Creations Teriyaki Stir-Fry Sauce
250 g (4 cups) finely chopped cabbage
2 spring onions, sliced on the diagonal
1 tbsp toasted sesame seeds
¼ cup toasted cashew nuts (optional)

Step 1
Combine the chicken, sesame oil, garlic and Chinese 5 Spice powder in a small bowl. If time permits, cover and refrigerate for 30 minutes.
Step 2
Cook the noodles following the packet instructions. Drain, rinse under cold water then toss in a little sesame oil.
Step 3
Heat the vegetable oil in a wok or large frying pan over high heat. Add the chicken and stir-fry over high heat for 4 to 5 minutes until cooked.
Step 4
Return the noodles to the pan and stir fry for 2 minutes. Add peas or edamame beans and Wattie's Wok Creations Teriyaki Stir-Fry Sauce. Continue to stir-fry for 2 to 3 minutes, until the noodles are hot. Stir in the cabbage and cook for an extra 1 minute until the vegetables are crisp and tender.
Step 5
Divide into bowls and garnish with spring onions and sesame seeds. If desired, top with toasted cashew nuts.
