Stuffed Baked Potatoes

Here's two great recipes for feeding the family over the holidays. It's sure to be a winner with lots of Kiwi favourites.

Ingredients

4 large potatoes, scrubbed and rinsed
420 g can Wattie's Lite Spaghetti
75 g ham, chopped
2 Tbsp chopped chives or parsley
3 Tbsp grated Edam cheese
1 tsp oil
150 g 100% New Zealand Trim Pork Mince
2 spring onion, finely sliced
½ cup Wattie's Sweet & Sour Sauce

Sweet & Sour Sauce

Wattie's®Sweet & Sour Sauce is a delicious sauce that will be enjoyed by the whole family. Great for dipping or served with chicken nuggets or fish.

Method

Step 1
Method for Spaghetti and Cheese Stuffed Potatoes
Step 2
1. Pierce the potatoes with a fork, arrange evenly in a microwave and cook on HIGH for 15-20 minutes or until tender, turning halfway though cooking. Cool until easy to handle. Cut a slice off the top of each potato and scoop out the filling. Place the potatoes in a shallow ovenproof dish.
Step 3
2. Mix the Wattie's Lite Spaghetti, ham, chives and scooped out potato together and use to fill the hollowed out potatoes with spaghetti mixture, sprinkle with cheese. Bake at 200°C for 12-15 minutes or until hot and golden.

Method for Sweet & Sour Pork Stufffed Potatoes
Step 5
1. Pierce the potatoes with a fork, arrange evenly in a microwave and cook on HIGH for 15-20 minutes or until tender, turning halfway though cooking. Cool until easy to handle. Cut a slice off the top of each potato and scoop out the filling. Place the potatoes in a shallow ovenproof dish.

2. Heat a small non-stick pan with oil, brown pork mince, Stir in the spring onions, corn and scooped out potato and heat.

3. Mix in the Wattie's Sweet & Sour Sauce and use to fill the hollowed out potatoes. Bake at 200°C for 10-12 minutes or until hot.
