Here’s one for all you vegetable lovers out there − a lasagne packed with delicious flavours and loads of your favourite roast vegetables. Let’s not forget the rich tomato and super-creamy cheese sauces that make up this [SERIOUSLY] clever lasagne.

Ingredients

¼ large pumpkin, cut into 1cm pieces
1 large kumara, cut into 1cm pieces
2 carrots, peeled and cut into 1cm pieces
2 parsnip, peeled and cut into 1cm pieces
1 red onion, diced
400g can Wattie's Lentils in Springwater, drained
2 cups chopped spinach leaves
500g jar HEINZ Seriously Good Four Cheeses Creamy Lasagne Bake Pasta Sauce
6 - 8 lasagne sheets
525g jar Heinz® [SERIOUSLY] GOOD™ Rich Tomato Lasagne Bake Sauce
½ cup grated parmesan cheese

Step 1
Preheat oven to 200°C
Step 2
Place vegetables on a lined baking tray and toss with a dash of oil. Roast for 15-20 minutes or until tender. Transfer to a large mixing bowl. Add Wattie's lentils, spinach and HEINZ Seriously Good Four Cheeses Creamy Lasagne Bake Pasta Sauce. Stir well to combine
Step 3
Grease a medium lasagne-style ovenproof dish. Place a layer of lasagne on the base of the dish to cover
Step 4
Spoon half the vegetable mixture over the lasagne. Place a layer of lasagne over the vegetables, then spread ⅓ of a jar of Heinz seriously good Lasagne Bake Sauce on top. Spoon over the remaining vegetables. Top with a final layer of lasagne
Step 5
Pour the remaining tomato pasta sauce on top. Sprinkle over parmesan. Bake for 20-25 minutes until the cheese is bubbling and golden and the pasta is cooked through
