For Pulled Pork:
2 tbsp Vegetable Oil
1 Large (or 2 small) Onion, sliced
6-7 Cloves Garlic, diced
1 kg with bone Pork Shoulder
130 g Wattie's Tomato Paste
1/2 Cup Wattie's Tomato Sauce
1/2 Cup F. Whitlock's & Sons Smoky BBQ Sauce
2 each Bay Leaves
1 tbsp Worcestershire Sauce
2 tbsp Soy Sauce
2 tbsp Honey
1/2 Cup Apple Cider Vinegar
1 tsp Gregg's Mixed herbs
To Taste Salt
To Taste Cracked Pepper
For Apple Slaw:
1 Medium Red Apple
1 Medium Green apple
1/2 Medium Lemon Juice
2-3 tbsp Heinz Seriously Good Original Mayonnaise

Method
Step 1
Heat up oil in a pan, add the sliced onions and cook for 5 minutes on high heat, until slightly golden brown.
Step 2
Add garlic to the pan and cook for 1-2 minutes. Set aside.
Step 3
Remove the layer of excess fat from the Pork shoulder with a sharp knife. We will add the fat layer in, to slow cook as well. This step allows you to remove the fat easily after you've finished cooking.
Step 4
Grab your slow cooker and transfer your pork shoulder and trimmed fat into it. Turn the slow cooker on low.
Step 5
Add sautéed onion and garlic on top, followed by tomato paste, tomato sauce, smoky BBQ sauce, bay leaves, worcestershire sauce, soy sauce, honey, apple cider vinegar, mixed herbs, and a generous amount of salt and pepper.
Step 6
Give everything a good mix in your slow cooker, making sure all the ingredients are mixed well and pork is covered up with the wet mix, close the lid and turn the heat to high.
Step 7
Cook in the slow cooker on high for 5 hours - stirring halfway and turning the meat over if possible.
Step 8
After 5 hours in the slow cooker, the meat should be tender and easily pulled apart.
Step 9
Remove the fat, bones and bay leaves and pull the pork.
Step 10
Turn the heat to low and cook for another 1-2hours until you're ready to serve the pork with your tacos.
Step 11
To make apple slaw, grate red and green apple, add lemon juice, mayonnaise and mix well.
Step 12
Heat up tortillas and add the apple slaw followed by pulled pork, sliced avocado, sliced cabbage, and your choice of pickle, I recommend pickled onion or gherkins.
Step 13
Garnish with some lime juice and coriander.
