Orzo Salad with Homemade Tomato Relish

This orzo salad uses a delicious homemade tomato relish to coat the pasta once you've made the relish, the orzo salad is really quick to whip up as a fresh, light salad for lunches or to take to a BBQ.

Homemade Tomato Relish:
2 x 400 g cans Wattie's Whole Peeled Tomatoes, strained
2 large onions, diced
3 cloves garlic, finely chopped
1 tbsp curry powder
2 tsp salt
1 tsp black mustard seeds
250g white vinegar
200g caster sugar
1 tbsp cornflour (plus touch of vinegar)
For the Orzo Salad:
250g Orzo pasta
2 radishes, sliced
fresh tomatoes, chopped
handful of fresh basil leaves
1 tub of cherry mozzarella balls, sliced
sprinkle of croutons

Method
To make Homemade Tomato Relish:
Step 1
Add a drizzle of olive oil to a large sauce pan on high heat
Step 2
Add onions, garlic, tomatoes, curry powder, salt and mustard seeds
Step 3
Stir and press tomatoes to break it up. Reduce heat to low and add vinegar and caster sugar, stirring to combine.
Step 4
Continue cooking for 1 hour, till liquid has reduced and mixture has thickened. Make a paste with cornflour mixed in with a touch of extra vinegar. Add to relish and cook for a further 1 minute.
Step 5
Pour relish into sterilised jars and seal. Keeps well in the fridge for 4 weeks.
To make the orzo salad is quick and easy:
Step 1
Cook Orzo pasta to packet instructions. Drain in a colander and leave to cool, set aside.
Step 2
Add cooled pasta into a large bowl.
Step 3
Add 1 cup of your homemade tomato relish, and stir to mix.
Step 4
Lightly stir in radish slices, chopped fresh tomatoes, fresh basil leaves, cherry mozzarella and crunchy croutons. Serve with freshly grounded black pepper.
Tips
You can store the relish in the fridge for up to 4 weeks to use on sandwiches, cheese and crackers or burgers.
