Loaded fries are a must order when out for dinner with friends and for good reason, but, nothing beats home made and definitely not our loaded cauliflower fries with guacamole and salsa. A tasty side dish to bring to a pot luck or setting yourself.

Ingredients
400g bag Wattie’s Frozen Veggie Bites – Cauliflower Fries
2 ripe avocados, peeled and seed removed
2 Tbsp lemon or lime juice
2 Tbsp lemon or lime juice
1 small clove garlic, crushed
1 tomato, finely chopped
2 tbsp very finely chopped red onion
2 Tbsp finely chopped coriander
Hot chilli sauce to taste
1 roasted red pepper, finely chopped
2 Tbsp finely chopped red onion
1 Tbsp finely chopped coriander
Coriander to garnish
1 Tbsp lime juice
½ cup grated cheese
To serve, extra coriander sprigs

Method
Step 1
Preheat the oven to 220C. Cook the Cauliflower fries following the packet directions.
Step 2
Meanwhile, prepare the guacamole. Place the avocado flesh into a bowl with the lemon or lime juice and garlic. Mash coarsely with a fork. Stir in the tomato, onion, coriander and hot chilli sauce. Season to taste with salt and pepper.
Step 3
To prepare the salsa, combine the red pepper, onion, coriander and lime juice. Season to taste with salt and pepper.
Step 4
Once cauliflower fries are cooked, top with the cheese and return to the oven for 5 minutes until cheese has melted. To serve, top with dollops of the guacamole and spoonfuls of salsa. Scatter over extra coriander sprigs
