Lentil Pav Bhaji

Lentil Pav Bhaji is an Indian street food and is such an easy dinner idea for a cold winter’s night. The thick vegetable curry is served on a soft bread roll traditionally, but we serve this recipe on brioche to make it a delicious comfort food.

2 Medium Potatoes, chopped into bite-sized pieces
1 Tbsp Oil
½ Cauliflower, diced
10 Green Beans, finely diced
1 Carrot, finely diced
2/3 cup Frozen Peas
400g can Wattie's Lentils in Springwater, drained
1 Green Capsicum, finely diced
1 Medium onion, finely diced
2 Cloves Garlic, minced
3 Tbsp Tomato Paste
400g can Wattie's Crushed & Sieved tomatoes
1 ½ Tsp Ground Cumin
3 Tsp Garam Masala
1 Tsp Gregg's Ground Turmeric
1 ½ Tsp Gregg's Ground Chilli Powder
2 Tbsp Butter
Salt & Pepper
To Serve
4 Brioche Buns
½ Onion, diced
Lime wedges

Step 1
To make the vegetable curry, boil the cauliflower, green beans, carrot, and frozen peas in salted water until very soft.
Step 2
In the last 2 minutes of cooking add in drained lentils. Drain most of the water when done but leave about ¼ - 1/3 cup.
Step 3
Boil the potatoes separately in salted water until very soft and easily mashed.
Step 4
Meanwhile, heat up your oil in a frying pan and gently sauté the onion and capsicum for 10 minutes until golden and soft.
Step 5
Add the garlic for 1 minute then the tomato paste and cook until the oil starts to separate (about 3-5 minutes). Then add in your spices and cook for a further 2-3 minutes.
Step 6
Pour in your chopped tomatoes and cook down for another 5 minutes. Then mash your veggies and potatoes and stir them into the tomato mixture bit by bit. Season with salt and pepper.
Step 7
Add water until you reach your desired sauce consistency.
Step 8
Slice and toast your buns, spread with butter, and spoon the vegetable mixture over your buns.
Step 9
Serve with a lime wedge, some chopped onions, and coriander on top."
Switch It Up
Choose a fresh wholegrain roll instead of brioche rolls for extra fibre.
