Mix the spice paste ingredients together. Make cuts into the lamb. Rub the paste into the lamb. Place on a tray and cover.*
Preheat oven to 150°C ( fan assisted). Place the lamb, fat side up into a roasting dish. Pour stock around the base of the lamb. Cover dish tightly with foil or lid. Roast for 3 hours. Remove the foil then continue to roast for another 1 hour, or until the meat falls from the bone and the liquid has reduced.
Remove lamb from the pan and allow to rest for 10 minutes before pulling apart with 2 forks. Mix with the pan juices and toss the freshly chopped mint through the lamb.
To serve heat pita pockets or flatbread. Fill with shredded lettuce, lamb, tomato and finely sliced red onion. Drizzle over Heinz Street Food Roasted Garlic Sauce. * lamb can be prepared and refrigerated overnight
