Spice Paste
2 tsp Gregg's Ground Cumin
2 tsp Gregg's Ground Coriander
2 tsp Gregg's Ground Paprika
1 tsp Gregg's Ground Sumac Blend
1 tsp Gregg's Ground Turmeric
½ tsp Gregg's Ground Allspice
½ tsp salt
2 cloves garlic, crushed
Zest 1 small lemon
2 Tbsp olive oil
1 - 1.2Kg leg lamb, bone in
2 cups chicken or beef stock
¼ cup fresh mint, chopped
To Serve
6 pita pockets or flatbread
Shredded lettuce
Sliced tomatoes
Finely sliced red onion

Step 1
Mix the spice paste ingredients together. Make cuts into the lamb. Rub the paste into the lamb. Place on a tray and cover.*
Step 2
Preheat oven to 150°C ( fan assisted). Place the lamb, fat side up into a roasting dish. Pour stock around the base of the lamb. Cover dish tightly with foil or lid. Roast for 3 hours. Remove the foil then continue to roast for another 1 hour, or until the meat falls from the bone and the liquid has reduced.
Step 3
Remove lamb from the pan and allow to rest for 10 minutes before pulling apart with 2 forks. Mix with the pan juices and toss the freshly chopped mint through the lamb.
Step 4
To serve heat pita pockets or flatbread. Fill with shredded lettuce, lamb, tomato and finely sliced red onion. Drizzle over Heinz Street Food Roasted Garlic Sauce.
* lamb can be prepared and refrigerated overnight
