The delicious combition of guava and lime is quite outstanding in this beautiful smooth and silky citrus butter. It’s great served on toast, dolloped on scones or as a filling in little pastry tartlet cases.

125 ml Golden Circle Guava Nectar
125 g butter
¾ cup sugar
4 egg yolks, whisked

How do I make it ?
1. Finely grate the zest of limes, then juice the limes and add to the Golden Circle Guava Nectar. Strain. Combine the strained juice, butter and sugar in a saucepan and heat over medium heat until sugar dissolves.
2. Remove from heat and whisk in yolks. Return to heat, stirring constantly until mixture thickens. Do not allow to boil.
3. Pour into a sterilised jar, cool then refrigerate until ready to use. Stores well for several weeks in the refrigerator. Delicious served with toast or croissants.
