This salad is super easy to create. Use the freshest ingredients to get the best colours and flavours. It’s a summer essential, delicious served with grilled meat. It’s also best to dress just before serving.

Ingredients
1 red capsicum, deseeded
1 green capsicum, deseeded
1 Lebanese cucumber
1 small red onion, thinly sliced
1 punnet cherry tomatoes, halved
100g traditional feta, cut into cubes
250ml bottle Eta Lite & Free Balsamic Dressing

Step 1
1. Cut red and green capsicums into 1cm pieces. Slice cucumber in half lengthwise and cut into chunks.
Step 2
2. Put prepared salad ingredients and feta into a bowl and toss about ¼ cup (or to taste) of Eta Lite & Free Balsamic Dressing through the salad.
