French toast is an old Kiwi favourite way of using up stale bread and it was often served with golden syrup. Now it is popular with bacon, banana and maple syrup.
Whisk together the eggs, milk, vanilla essence and sugar in a shallow container big enough to dip the bread in.

Heat a frying pan with a little butter or oil.
Step 3
Dip slices of bread into milk mixture, giving them a few minutes to absorb the egg without going soggy. Quickly remove from mixture and drain off any excess. Place in the frying pan and cook on each side until golden. Keep warm.
Step 4
Fry or grill the bacon and bananas on high heat until cooked and golden.
Step 5
Serve French toast topped with bacon, banana and maple syrup.
