Dumpling Soup

A delicious cosy meal to have on your next night in. Warm up with our dumplings served in a mouth-watering broth.

Ingredients
Dumplings:
½ tsp Greggs ground ginger
½ tsp Greggs granulated garlic
½ tsp Greggs ground chilli
Juice of half a lime
1 tsp Soy sauce
Handful of finely chopped coriander
¼ Cabbage, finely chopped
10 Dumpling wrappers
150g Chicken mince
Broth:
2 heads of bok choy
¼ Cabbage, roughly chopped
½ Sliced onion
2 Chicken stock cubes
1 tsp Sesame oil
1 tsp Greggs ground ginger
1 tsp Greggs granulated garlic
1 tsp Greggs ground chilli
1 ½ cups Boiling water
Juice of half a lime
To Garnish:
Spring onion
Coriander
Sweet Chilli/Sriracha

Method
Dumpling Filling:
Step 1
To make the dumpling filling, mix all ingredients together and season with salt. To make the dumplings, wet the edge of a dumpling wrapper.
Step 2
Place a teaspoon of the filling in the middle of the wrapper. Fold the wrapper in half to form a semi-circle.
Step 3
Pinch the sides of the wrapper to seal the mixture. Crimp the edges with your fingers to form pleats. Makes 10-12 dumplings. Stand aside.
Broth:
Step 1
To make the broth. Heat up a pot on medium heat and pour in the sesame oil. Add in the onion and the spices and sauté for about 3mins or until the onion is soft.
Step 2
Add in the boiling water and chicken stock cubes. Mix until the stock cubes have dissolved.
Step 3
Add in the bok choy and cabbage and the dumplings. Let the broth simmer for about 10mins. Season to taste.
Step 4
To serve, sprinkle over the spring onion and coriander and drizzle on sweet chilli and/or sriracha. Enjoy!
