Ingredients

½ cup panko crumbs (or breadcrumbs)
2 Tbsp chopped fresh parsley
grated zest of half a lemon
4 white fish fillets (tarakihi or snapper are good), 125g approx
½ cup HEINZ [SERIOUSLY] GOOD™ Original Mayonnaise

Step 1
Preheat oven grill or turn oven to 190°C fan grill setting.
Step 2
Mix panko crumbs, chopped parsley and grated lemon zest together.
Step 3
Place the fish on an oven tray lined with baking paper. Spread each fillet with HEINZ [SERIOUSLY] GOOD™ Original Mayonnaise and sprinkle over crumb mixture.
Step 4
Grill or fan grill the fish with shelf towards the top of the oven for 8-10 minutes or until the fish is just cooked through and the coating crisp and golden. Serve with a salad or seasonal vegetables.

Tips

Fish fillets can be replaced with boneless, skinless chicken breasts if preferred. Bake at 190°C for 25-30 minutes, until chicken is tender and crumbs golden.
