7-8 slices bread
50 g butter, softened
5 eggs
½ cup caster sugar
1-2 tsp finely grated orange rind
1 cup cream
1 ½ cup milk

Step 1
Preheat oven to 180°C. Lightly grease a 2.5L ovenproof dish. Spread the bread slices evenly with the butter. Cut into quarters and arrange in the dish.
Step 2
Beat the remaining ingredients until combined. Slowly pour over the bread and stand for 10 minutes.
Step 3
Place the dish inside a roasting pan and pour enough hot water around it to come halfway up the dish. Bake for about 1 hour or until the custard is set.

Modern variations include using spiced fruit bread or stale croissants instead of plain bread, or spreading the bread with Craig’s Blackberry Jam.
