• 1 lime, cut in half
  • 1 Tbsp sugar
  • 1 red onion, sliced
  • 2 Tbsp Gourmet Garden Thai Seasoning
  • 200 ml lite coconut milk
  • 400 g prawns or boneless chicken, cut into strips
  • 4 cups Wattie's International Stir-Fry Mix
  1. Heat a wok or frying pan. Press cut lime into sugar to coat and place in hot pan to caramelise. When lime has browned remove from heat and set aside.
  2. Heat a dash of oil in a wok and stir-fry the onion for 1 minute. Add Gourmet Garden Thai Seasoning and pour in the coconut milk. Add prawns or chicken. Cook for 1 minute for prawns or 5 minutes for chicken.
  3. Add the Wattie's International Stir-Fry Mix and cook for a further 3-5 minutes. Serve on noodles or rice with the caramelised lime.

Replace the prawns with calamari or add a combination of both.
