• 1 small onion, finely diced
  • ½ x 700 g bag Wattie’s Frozen Super-greens Vegetables
  • 150 g trimmed bacon rashers
  • 850 g potatoes, peeled and chopped (to make 700g)
  • 1 tsp butter or milk
  1. Heat a dash of oil in a non-stick frying pan and cook onion until soft. Add in the Wattie’s frozen Super-greens Vegetables and stir fry until cooked, remove from the pan and place in a bowl. Fry or grill the bacon until crispy. Remove from the heat and dice before adding it to the bowl of vegetable mix.
  2. Cook potatoes in lightly salted water untill tender. Drain and mash with the butter or milk. Add mashed potato to vegetable mix and season with pepper.
  3. Heat the frying pan with a dash of oil, drop large spoonfuls into the pan and cook each side until golden. Serve with your favourite breakfast foods such as a scrambled or poached eggs, grilled mushrooms or grilled tomatoes.

I ended up adding an egg as the mixture didn’t combine and was breaking up...... a bit like bubble & squeak. But was still yummy.
