- 1 Tbsp fennel seeds
- 1 Tbsp ground cumin
- 1 Tbsp ground coriander
- 2 cloves garlic, crushed
- grated zest 1 orange
- 3 Tbsp olive oil
- 4 100% New Zealand Pork Leg Steaks (approx. 2cm thick)
- Mix the spices, garlic, orange zest and olive oil together. Season.
- Rub mix into the 100% New Zealand Pork Leg Steaks. Refrigerate for 30 minutes to marinate.
- Barbecue over medium to high heat for 3 minutes on each side or until pork is tender and cooked to your liking. Rest for 3 minutes before serving.
TIPS FOR ROASTING VEGETABLES
Pre-heat your oven to 210-220o
C. The high temperature will ensure your vegetables will roast and brown. Cut hard vegetables such as potatoes, beets, kumara and carrots into uniform pieces so they all cook at the same time. Place prepared vegetables in a bowl then lightly toss them with olive oil and any seasoning. Line a baking tray with baking paper or grease the pan directly. Place your vegetables on in a single layer. When using hard and soft vegetables together place the soft vegetables in half way through the cooking process as they require less time to cook.
