• ¾ cup caster sugar
  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cardamom
  • 2 eggs
  • 1 cup peach yoghurt
  • 410 g can Wattie's Peaches Sliced in Clear Fruit Juice
  • 100 g butter, melted

Preheat oven to 220°C.

1. Sift the sugar, flour, baking powder, baking soda and ground cardamom into a large bowl.

2. In a blender or food processor, mix together the eggs, yoghurt and Wattie's Peaches Sliced in Clear Fruit Juice with the juice.

3. Make a well in the centre of the dry ingredients and pour in the yoghurt mixture. Fold together with a holed spoon, folding in the melted butter as you go.

4. Divide between 12 well greased muffin tins.

5. Bake for 15-20 minutes.

Great muffins, but made 18 for me. Try leaving 1/2 the peaches out of the blender and chopping into chunks instead.

Great Muffins. Loved by all. Makes a really big muffin if in 12 muffin pans. Works well with other canned fruit and yoghurt.

Probably the nicest muffins i've tasted in ages. So moist. I agree with there being a lot of mixture. I put the extra in mini muffins for my son. I didn't have peach yogurt so I use apricot.
