• 4 large lemons
  • 125 g butter
  • 2 cups sugar
  • 4 eggs, beaten

1. Finely grate the zest from the lemons and place in a stainless steel bowl or double boiler. Juice the lemons and add to the rind along with the butter and sugar.

2. Place the bowl over a saucepan of boiling water and stir while heating until the butter has melted and sugar has dissolved. Add beaten egg and stir over the heat until it starts to thicken.

3. Remove from heat and pour into clean sterilised jars and serve on toast or scones or use for cake or pie fillings.

Top Tips

This can be made in the microwave, place all the ingredients in a microwave safe bowl and heat on medium heat for 8- 10 minutes stirring after each minute.

I ran out of the shop brought lemon honey today and I thought i'It's time to try making it' This recipe is so brilliant!!!!! it't made 2 medium sized jars and a wee bit left over to test of course. Next time I may strain it before putting into jars... but other than that, tastes better than shop brought. I'm making it agin for gifts.

I Made this last night, A suggestion would be to simply use a juice machine to prices the lemons.I just put the lemons in whole into the machine. Made an end product which was of an even and smooth consistency. Served up the morning after to the kids, they loved it. Fast to make also.

I have used this recipe for a number of years, always made in the microwave. I usually cook everything except the eggs for 5mins on high, then add the eggs, beat/whisk well, then microwave for a further 1min on high.

Hi with the microwave version was I meant to add the eggs later? I did what the recipe said & I have bits of scrambled eggs in it & it hasn't thickened much (I went for 13 minutes because it looked so thin.

Yes, you've followed the recipe correctly. We suggest straining the lemon honey/curd before pouring into the jars. The timing of cooking in the microwave depends on it's power.

I've followed the method, but have been stirring this mixture over heat for 45 minutes now (no joke). What did i do wrong?
