• 1 onion, sliced
  • 2 cloves garlic, crushed
  • 6-8 chicken drumsticks, skin removed
  • 100 g button mushrooms, sliced
  • 1 cup long grain rice
  • 420 g can Wattie’s Condensed Creamy Chicken Soup
  • 1 ½ cup boiling water
  • ½ Tbsp Lea & Perrins Worcestershire Sauce
  • juice of 1 lemon
  • grated zest of 1 lemon
  • ½ tsp salt, to taste
  • 1 bouquet garni (bay leaf, parsley, thyme), tied together
  • 1 cup Wattie’s frozen Baby Peas
  • 2 Tbsp chopped fresh parsley

1. Preheat oven to 180°C. Heat a dash of oil in a flameproof casserole dish. Add the onion and garlic and cook until the onions begin to soften.

2. Place chicken in with the onions. Add mushrooms. Sprinkle rice over chicken.

3. Mix together Wattie’s Condensed Creamy Chicken Soup, boiling water,Lea & Perrins Worcestershire Sauce, lemon zest and juice and salt. Pour over the chicken. Add the fresh herbs. Cover and cook for 40 minutes, until the chicken is cooked. Five minutes before the end of cooking add the Wattie’s frozen Baby Peas.

Serve garnished with chopped parsley and seasonal vegetables on the side.

Handy Tips

Simply wipe with a clean, slightly damp cloth or paper towel to clean mushrooms, as they may discolour if soaked in water.

This was very bland, we had alot of leftovers so the next night we added cooked bacon and reheated it in the fry pan. It tasted much better after the bacon had been added.

Tried to make this twice now, 1st time rice and chicken didn't cook, 2nd time the rice didn't cook (the chicken did, JUST), but that was with cooking it for about double the time stated on the recipe. Tastes alright, but not happy that it hasn't cooked twice :(

I made this tonight and like Celina it took ages to cook,would of been over an hour.I must admit that it was quite bland but I was starving by the time it was served.Hubby didnt like it nor did my grand daughter.Im wondering if the skin was left on that it may have more flavours..any suggestions.Thanks

YUK! Made this tonight and it looked good but, boy, it tasted disgusting. Also the rice did not cook properly and we cooked it for a bit longer than recipe said. All 4 of us thought it was horrible. Sorry!
