• 1 ripe avocado
  • ½ cup Eta Thick & Creamy Mayonnaise
  • 1 cooked rotisserie chicken
  • 6–8 multigrain wraps
  • 6 cups shredded iceberg lettuce
  • 3 cups grated carrot
  • ½ x 450g can Wattie's Sliced Beetroot, drained and cut into matchstick lengths
  • 1 red onion, finely diced
  1. Mash the avocado flesh and mix into the Eta Thick & Creamy Mayonnaise.
  2. Remove the chicken meat from the cooked chicken, discarding the bones and skin, and shred the meat.
  3. Spread 1–2 Tbsp mayo and avocado mix over a multigrain wrap. Layer the lettuce, chicken, carrot, Wattie’s Sliced Beetroot and red onion down the centre of the wrap.
  4. Fold up the bottom of the wrap then fold one side over the filling and fold the other side over to enclose the filling. Repeat with remaining wraps and fillings.

Switch it up

  • You can add extra fillings like diced cucumber, red capsicum strips, grated cheese and diced tomatoes, if wished.

Simple and straightforward. As a student, I'm always looking for easy to throw together recipes that won't break the bank. Bulk carrots, lettuce and the beetroot are super cheap! I also used some cucumber, but instead of the avocado (expensive, and not a huge fan) I used a tablespoon of thai green curry paste for kick. Instead of the wraps, it also easily turns into a salad.

I have fussy as kids....so when I are these i thought to myself here we go again the tantrums will start, the "this is yuck" will start.....but oh no....they went down so we'll they asked for 2nds. Amazballs....Will definitely be adding this to my meal planning menu.

I used leftover barbecued butterflied chicken in the wrap. It is perfect for lunch - enough for 2. Omit the chicken for a "March vegan" option. I especially loved the avo mayo. Try it!!

Was super easy to make used fresh roasted beetroot as had some was great. Also replaced beetroot with char grilled capsicum for friend who doesn't like beetroot. Great to take to work for lunch

A general go to for lunches, both at work and at school. Any left overs in the fridge can be used up in these also. During the summer it’s nice to have a ‘cold’ meal with salad fillings and over the winter we toast them in a sandwich press for something a bit ‘warmer’. Sweet chilli sauce is also a nice extra dressing.

great for a lazy dinner to to whip up a quick lunch for friends...tried it with pita pockets and added capsicum for a sweet hit....so easy to make and if you have all the ingredients prepared people can make their own, great if catering for people with different tastes!
