• 500 g boneless, skinless chicken breast, cut into 2cm pieces
  • 210 g pouch Wattie’s Wok Creations Thai Green Curry Simmer Sauce
  • ½ cup coconut milk
  • 2-3 courgettes, thickly sliced
  • juice of half a lime
  • extra coconut milk
  • fresh coriander or Thai basil leaves (optional)
  1. Heat a dash of oil in a lidded frying pan or saucepan. Add the chicken and stir-fry to colour. Add Wattie’s Wok Creations Thai Green Curry Simmer Sauce and coconut milk. Bring nearly to the boil. Reduce heat, cover and simmer for 10-15 minutes until chicken is almost cooked.
  2. Add the sliced courgettes and cook a further 4-5 minutes, until courgettes and chicken are tender.
  3. Stir through a little lime juice and extra coconut milk if wished.
  4. Garnish with coriander or Thai basil leaves and serve with jasmine rice.

I cannot usually eat a curry ( no gallbladder ) and they play havoc with my digestion but had one tiny mouthful to try it and to my surprise I ended up eating the whole bowl full and could very easily have gone back for seconds. It was really lovely and even the children loved it all.. My family are all very fussy with their food and found this to be the loveliest meal we have eaten. Thank you so much Watties

Is a good recipe, mine came out thinner and not as Creamy as the picture or a restaurant green curry, it was more spicy than flavourful but still eatable, not sure if it's because I added a stir fry veggie mix into it or not. I think I need another packet of the sauce and some creamier coconut milk.
