• 7-8 slices bread
  • 50g butter, softened
  • 5 eggs
  • ½ cup caster sugar
  • 1-2 tsp finely grated orange rind
  • 1 cup cream
  • 1 ½ cup milk
  1. Preheat oven to 180°C. Lightly grease a 2.5L ovenproof dish. Spread the bread slices evenly with the butter. Cut into quarters and arrange in the dish.
  2. Beat the remaining ingredients until combined. Slowly pour over the bread and stand for 10 minutes.
  3. Place the dish inside a roasting pan and pour enough hot water around it to come halfway up the dish. Bake for about 1 hour or until the custard is set.

Top Tips

  • Modern variations include using spiced fruit bread or stale croissants instead of plain bread, or spreading the bread with Craig’s Blackberry Jam.
  • Another idea is to layer Wattie’s Sliced Apples alternately with the bread.
