• ¾ cup jumbo oats
  • 2 Tbsp sunflower seeds
  • 4 dried apricots, chopped
  • ¼ cup raisins
  • ½ cup apple or orange juice
  • ½ cup natural yoghurt
  • 1 apple, grated
  • ¼ cup blueberries (optional)
  • unsweetened natural yoghurt to serve (optional)

1. Combine oats, sunflower seeds, apricots and raisins in a mixing bowl.

2. Pour apple or orange juice into a shaker or jug. Add natural yoghurt and shake or whisk to mix. Stir through the dried fruits, seeds and oats. Cover and leave overnight in the refrigerator.

To serve: Stir the grated apple into the muesli mix. Divide into serving bowls. Top with fresh blueberries and serve with a dollop of yoghurt if wished.

Everything fab except for using Complan! Yuk. I just soak in milk and can use a little vanilla bean paste or vanilla essence if really fancy the vanilla flavour. Don't always use apricots either, but can substitute with cranberries, which are a really nice mix with the grated apple added. Love Bircher Muesli!
