Ingredients

  • 1 cup self-raising flour
  • 410 g can Wattie's Cream Style Corn
  • ½ cup crumbled feta
  • 1 ½ tsp minced red chilli
  • 4 sundried tomatoes, chopped (optional)
  • 1 courgette, trimmed and grated
  • 1 egg, separated
  • ½ cup cold milk or water
  • 310 g jar Wattie's Bit on the Side Onion Marmalade

Cream Style Corn

Cream Style Corn has been a Kiwi favourite for generations. Wattie’s uses only the finest Hawke’s Bay corn for a cream style corn that is full of goodness, flavour and taste.

Onion Marmalade

Wattie's® Bit on the Side® Onion Marmalade is a delicious, thick, chunky relish that is perfect on sandwiches, burgers or simply served on a platter with cheese and crackers. Available in a 310g jar.

Method

1. In a bowl, stir together the flour with a pinch of salt and make a well in the centre.

2. In a large jug mix the Wattie’s Cream Style Corn with onion, feta cheese, chilli, sundried tomatoes if using, courgette, egg yolk and milk. Pour into dry ingredients and mix well.

3. In a clean bowl, beat egg white until stiff and fold into the fritter mixture.

4. Cook large spoonfuls in a lightly greased frying pan over a low to moderate heat for about 3 minutes each side.

5. Serve fritters with Wattie's Bit on the Side Onion Marmalade, salad greens and crispy bacon if wished.

When I made these everyone said how they hadn't had corn fritters in years and they were devoured very fast. Delicious with Sweet Thai Chilli sauce.
