Warm Pasta Salad
Don’t wait for summer for salads – this warm pasta salad with corn, feta cheese and salami is a great winter one-dish meal or side dish.

Ingredients
- 2-3 cups penne pasta
- boiling salted water
- 1/4 cup chopped fresh herbs
- juice of one lemon
- 200g finely diced marinated feta cheese
- 3-4 Tbsp oil
- 100g finely slices salami
- salt and pepper
- 500g bag Wattie's Chuckwagon Corn Mix

Method
1. Cook the pasta in boiling salted water for 10-12 minutes or until al-dente. Drain well.
2. Microwave the Wattie's Chuckwagon Corn Mix for 4 minutes, stirring half way through cooking. (Alternatively toss the vegetables in the hot saucepan for 4-5 minutes until they are just cooked).
3. In a bowl mix together the pasta, cooked vegetables, oil, lemon juice, salami, feta cheese, herbs and salt and pepper and toss to mix.
Serve warm or cold.
Tips
Serve hot garnished with chopped parsley or rosemary.

Great on its own as a dinner. Quick to prepare. Nice cold for lunch the next day too.
I have made this a lot and always get good comments it is so good to make on a Friday and then you have a quick snack ready to go over the weekend. I added a container of Chunky Dips, capsicum, cahew and parmesan to this recipe the last time I made it and it was even yummier!!
