Summer Peach and Cream Cheese Slice
There’s more important things to do in summer than slaving over a hot stove, like relaxing over a cold bottle of Chardonnay. So, pop this in the oven and put your feet up.

Ingredients
- 100 g softened butter
- 3/4 cup sugar
- 2 eggs
- 1 1/2 cups self-raising flour
- 1/2 cup desiccated coconut
- 1/4 cup milk

Topping
- 820g can Wattie's Peach Slices in Clear Fruit Juice (well drained)
- 250g pottle cream cheese
- 1/4 cup sugar
- 1 egg

Method
1. Put the butter, sugar, eggs, flour, coconut and milk into a food processor and process only until blended.
2. Spread into a greased and lined 24 x 30cm slice tin.
3. Arrange the Wattie's Peach Slices randomly or in neat even rows on top.
4. Blend the cream cheese, sugar and egg together in the food processor and pour over the top.
5. Bake at 190°C for 20-25 minutes until golden and well risen.
Serve with whipped cream.
