Nacho Bake

For a tasty meal you can’t go past this nacho bake. A tomato, mince and bean mix topped with Doritos corn chips and served with a delicious guacamole. You can also try this recipe with Doritos Nacho Cheese.

Ingredients

  • 500g lean beef mince
  • 1/2 red onion, sliced
  • 400g can Wattie’s Mexican Spiced Tomatoes
  • 420g can Wattie's Mild Chilli Beans
  • 170g pkt Doritos Salted Corn Chips
  • 1/2 cup grated Edam cheese

  • Guacamole
  • 1 avocado, peeled and mashed
  • 1/4 cup red onion, finely diced
  • 1 tsp diced chilli
  • 1 small tomato, diced
  • 1 clove garlic, crushed
  • lemon or lime juice

Method

1. Heat a dash of oil in a non-stick frying pan and add mince and brown, this is best done in two batches. Add the onion and pan-fry for a few minutes. Add the Wattie’s Mexican Spiced Tomatoes and Wattie’s Mild Chilli Beans and cook for a further 5 minutes.

2. Pour the mince mixture into a flat oven proof dish and scatter over the Doritos. Sprinkle over the grated cheese and place in an oven preheated to 180°C and fan bake for 10 minutes or until cheese has melted.

3. Make the guacamole by mixing all the ingredients together and adding lemon juice and salt and pepper to taste.

Tips

For a spicier mix use Wattie’s Hot Chilli Bean.
