Sweet & Sour Pork Meatballs with Vegetables

Sweet & Sour Pork Meatballs are simply delicious. The addition of a high fibre vegetable mix makes this quick, one-pan meal a very healthy pick!

Ingredients

  • 400g pork mince
  • 1 Tbsp sized knob of fresh ginger, peeled and grated
  • 1 tsp chilli, finely diced (optional)
  • 1 garlic clove, crushed
  • 1 apple, peeled and grated
  • 400g pkt Wattie’s Frozen High Fibre Mix
  • 125g sachet Wattie's Wok Creations Stir Fry Sweet and Sour Sauce

Method

1. Make meatballs by mixing the pork mince, ginger, chilli, garlic and grated apple together and shaping into about 20 small meatballs.

2. Heat a dash of oil in a non-stick frying pan, add meatballs and cook on a medium heat until browned and cooked through. Remove from pan and drain on a paper towel.

3. Add the Wattie’s Frozen High Fibre Mix to the pan and stir fry for 3-4 minutes or until cooked. Return the meatballs to the pan and pour over Wattie’s Wok Creations Sweet & Sour Stir-fry Sauce and heat for 1-2 minutes before serving on steamed rice.
