Tuscan Lamb Shanks

A traditional family favourite with Italian flavour!

Tuscan Lamb Shanks

Ingredients

  • 4 lamb shanks or 6 lamb shoulder chops
  • 1 tbsp oil
  • 250g whole baby mushrooms
  • 1-2 onions, chopped
  • 420g can Wattie's Traditional Garlic Pasta Sauce
  • 1/2 cup red wine or beef stock
  • 10-12 black olives

Tips

For variation: Add 4-6 chopped dried prunes for additional flavour texture.

Method

1. Brown the lamb shanks in the hot oil in a frying pan. Transfer to a casserole.

2. Scatter over the mushrooms and onions.

3. Pour over the Wattie's Traditional Garlic Pasta Sauce , red wine and add the olives if using.

4. Bake at 180°C for about 1 hour or until the lamb shanks are tender.

5. Serve hot over mashed potato, polenta or pasta.

we have varied this recipe to use for chops- especislly the mutton ones as it tenderises them. The kids all love it and by adding more cans of the pasta sauce etc you can feed even the most ravenous teenager. Goes well in the slow cooker too.
