Ingredients
- 4 lamb shanks or 6 lamb shoulder chops
- 1 tbsp oil
- 250g whole baby mushrooms
- 1-2 onions, chopped
- 420g can Wattie's Traditional Garlic Pasta Sauce
- 1/2 cup red wine or beef stock
- 10-12 black olives
Tips
For variation: Add 4-6 chopped dried prunes for additional flavour texture.
Method
1. Brown the lamb shanks in the hot oil in a frying pan. Transfer to a casserole.
2. Scatter over the mushrooms and onions.
3. Pour over the Wattie's Traditional Garlic Pasta Sauce , red wine and add the olives if using.
4. Bake at 180°C for about 1 hour or until the lamb shanks are tender.
5. Serve hot over mashed potato, polenta or pasta.
