  • 4 Italian sausages
  • 400 g Wattie's Southern Style Mixed Bean Sensations, heated
  • 4 slices thick grain bread, toasted then cut in half
  • 4 eggs, whisked
  • 1 Tbsp cream
  • 1 Tbsp chopped chives or 2 spring onions, finely sliced
  • fresh ground pepper and salt
  • 2 Tbsp butter
  • 8 cherry tomatoes, cut in half
  • 1 handful rocket leaves


1. Barbecue or pan fry sausages in a little oil on a hot barbeque grill or stovetop grill plate. Transfer to a plate and keep warm.

2. Meanwhile, whisk eggs with cream and chives and season to taste with freshly ground pepper and salt. Melt butter in a non-stick frying pan over medium-low heat. Add egg mixture and cook, stirring occasionally until the eggs are just set.

To serve:

Place a sausage on a serving plate. Top with two-halves of toast, scrambled egg, warmed Wattie's Southern Style Mixed Bean Sensations then finish with a sprinkle of cherry tomatoes and rocket leaves. Serve immediately.
