Thai Coconut Curry
This easy recipe can be made with either prawns or chicken and, with Gourmet Garden Thai Seasoning, the flavour has been perfected for you.

Ingredients
- 1 lime, cut in half
- 1 Tbsp sugar
- 1 red onion, sliced
- 2 Tbsp Gourmet Garden Thai Seasoning
- 200ml lite coconut milk
- 400g prawns or boneless chicken cut into strips
- 4 cups Wattie’s frozen vegetables - International Stir-Fry Mix
Tips
Replace the prawns with calamari or add a combination of both.
Method
1. Heat a wok or frying pan. Press cut lime into sugar to coat and place in hot pan to caramelise. When lime has browned remove from heat and set aside.
2. Heat a dash of oil in a wok and stir-fry the onion for 1 minute. Add Gourmet Garden Thai Seasoning and pour in the coconut milk. Add prawns or chicken. Cook for 1 minute for prawns or 5 minutes for chicken.
3. Add the Wattie's International Stir-Fry Mix and cook for a further 3-5 minutes. Serve on noodles or rice with the caramelised lime.
