Sweet and Sour Chicken with Coconut Sambal

We all love sweet and sour chicken but this Coconut Sambal with which it is served, is especially tasty. Why not add some pawpaw or mango to the salad and enjoy this tropical dish.

Sweet and Sour Chicken with Coconut Sambal

Ingredients

  • 1 kg Tegel chicken wings or nibbles
  • 2 Tbsp lemon juice
  • 1 Tbsp minced ginger
  • 3 Tbsp Wattie's Bit on the Side Sweet and Sour Sauce
  • 1/2 cup shredded coconut, toasted
  • 2 spring onions, finely sliced
  • 1 Tbsp lime or lemon juice
  • 1 Tbsp freshly chopped coriander

Tips

Toast coconut by placing on a tray under a preheated grill for afew minutes, watching closely as it browns quickly.

Method

1. Place the chicken wings in a bowl or lidded plastic container, add lemon juice, ginger and Wattie’s Bit on the Side Sweet&Sour Sauce , mix and toss to coat, cover and marinate for at least 30 minutes.

2. Remove the chicken from the marinade, and bake in an oven preheated to 180°C for 20 minutes or until golden and chicken is cooked through.

3. Remove and serve sprinkled with coconut sambal and an Asian inspired salad.

Coconut Sambal


Combine toasted coconut, spring onions, Wattie’s Bit on the Side Sweet&Sour Sauce , lime juice and coriander in a small bowl, season with pepper, mix well.
